Potato & Egg Salad


This is a normal Japanese potato salad, and I want to make mine with a lot of eggs. I normally make a massive bowl of these for dinner, and feature the leftover ones for sandwich the next morning.

Ingredients
  • 4 potatoes
  • 3 eggs
  • 1 onion (sliced)
  • optionally available :ham, cucumber, carrot, corn and many others
  • 4 tbsp mayonnaise
  • 1 tsp vinegar
  • salt & pepper
Steps
  1. Peel the potato skin and reduce them into 1/4pieces. Boil the potatoes in a pot until it is tender sufficient to mash it. (10-15 mins)
  2. Make boiled eggs in any other pot and eliminate the shell.
  3. Mash each potatoes and eggs in a bowl, with a fork. Leave a few lumps for texture.
  4. Mix sliced onions and other elective vegetables into the bowl.
  5. Add mayonnaise and vinegar. Season with salt and pepper to taste. Enjoy!!
