Soto Ayam (Indonesian Chicken Soup)


Soto ayam is certainly one of my family preferred meals. In Indonesian language, soto means soup and ayam way hen. Accompaniments and Garnishes :
  • Glass noodle, soaked in warm boiling water till tender then drained
  • Shredded cabbage
  • Cooked rice
  • Homemade potato chips (elective)
  • Scallion stalk/chives, finely chopped
  • Shrimp crackers, procedure in a meals processor till they get powdery (non-obligatory)
  • Fried shallots (non-compulsory)
  • 6 tough boiled eggs
Steps
  1. In a frying pan, heat 3 tablespoon of oil and stir fry the spice paste, bay leaves, kaffir lime leaves, lemon grass and galangal till fragrant, about 2-3 minutes. Keep stirring to keep away from burning.
