Soto Ayam (Indonesian Chicken Soup)

- Scallion stalk/chives, finely chopped
- Shrimp crackers, procedure in a meals processor till they get powdery (non-obligatory)
- Fried shallots (non-compulsory)
- 6 tough boiled eggs
- In a frying pan, heat 3 tablespoon of oil and stir fry the spice paste, bay leaves, kaffir lime leaves, lemon grass and galangal till fragrant, about 2-3 minutes. Keep stirring to keep away from burning.
